
Rich and vibrant; a treat for the eyes and totally delicious in salads. Red cabbage is in season right now and this is one of my favourite recipes. Simple red cabbage slaw – perfect with Thai-style or griddled chicken or halloumi.
Serves 4
INGREDIENTS
300g cabbage
1 large carrot, coarsely grated
1 bunch spring onions, finely sliced
2tbsp mayonnaise
1tsp white wine vinegar
1tbsp extra virgin olive oil
METHOD
Shred the cabbage with a knife and place in a large bowl with the carrot, apple and spring onions.
In a separate bowl, whisk the mayonnaise, vinegar and oil with a fork. Season then toss with the salad. Serve or see our suggestions, below right.
